Abgoosht Dizi a Traditional meat Stew in Clay pot called Dizi
This is a clay pot just like Tajine/ Tagine in Moroccan Cuisine but in different shap as below

Ingredients for 5 persons
Lamb neck or arm with bones 800 gr
1cup checkpeas + white beans both soaked for 24 hours & drained
2big red onion
2teaspoon Tumeric
Salt&pepper & allspice/ gram masala & cinnamon to taste
2 Limoo Ammani ; dried Limes
4/5 small potato
3table spoons green chopped vegetables : parsley & cilantro and red chili
Lemon or sour orange & a grated onion for mixing in Tirid ; bread & soup
Flat bead for Tirid
Directions
You can use pot clay or ordinary pot or even pressure cooker
Place the meat , onion, white beans & cheeckpeas , turmeric , allspice , and dried lime(s) in the pot . Pour in water to cover everything. Cover the pot and place it on medium heat
Allow it to stay for 30 - 40 minutes in pressure cook or for 6 to 7 hours in clay pot
Once meat cooked add the washed and peeled potatoes , tomato paste, and a little bit of cinnamon and if needs a few cup of water then cover it
Once it cooked you can test salt & pepper and if necessary add some lemon juice
When ready to serve you will pour the water or soup into a separate bowl with some cinnamon and then prepare the meat to be mashed up

You will clean the meat off the bones, and take out the dried limes. Mash the meat, potatoes, and beans all together. Then you can pour some of the water on it if you desire. It is ready to eat with bread.You can add some grated or chopped onion and some lemon / sour orange juice and can decorate with some chopped parsley & cilantro

You will want to tear up pieces of flat bread or sSangak bread (or a combination) and pour the soup over the bread. The bread pieces become soaked and this part of this Abgoosht is called Tirid or Tilit.

Note: So if you want to extract the center of bones after you are separating everything, beat the contents of the bone out
I coverd this clay pot with some piece of foil and placed on the mid heat till 7 hours
